One Pan, Whole Autumn

A single roasting tray, six vegetables and the smell that makes the neighbours knock.

I keep a rule for pieces like this: if I can't explain why it matters over a cup of coffee, it doesn't go on the blog. This one survived three coffees and a long walk, which is usually a good sign. Here's what I found, what I got wrong along the way, and the small details that made it worth writing down.

The best stories are the ones you almost didn't write down.

Would I do it again? In a heartbeat — though next time with better shoes and a charged phone. If you've had a similar experience (or a completely opposite one), the comments are open and I read every single one.
